This week Broccoli Raab, Arugula, Slicing Tomatoes, Zucchini, Lettuce, Green Beans and Sweet Corn.
The first thing to go was the zucchini, grated and baked into Chocolate Chip Zucchini Bread Muffins. I made a double batch and they lasted that evening and the next morning. All the kids love muffins. So do all the adults!
Green beans were blanched then iced, tossed with a mustard vinaigrette and topped with fresh basil. Yum.
Corn was boiled, buttered and salted for another side dish one night. The lettuce and tomatoes also made yummy salad sides for dinner.
Finally the arugula, sauteed with fresh chives then scrambled with an egg and served on toast. I skipped the blanching process so once again the arugula was quite bitter, but I ate it anyway. Next time I’ll blanch first.
